Raspberry Ruffle Cheesecake

BASE
10 oz Digestive Biscuits
4 oz butter
Desert Spoon Golden Syrup

Melt the butter and syrup.
Crush the biscuits,
Mix together.
Press into a tin.

TOPPING
300g Philadelphia
50g icing sugar
Medium carton of Double Cream
4 oz raspberry ruffles (4/5 ruffles)
1 raspberry yogurt

Whisk the Philadelphia and the icing sugar.
Add the cream and whisk.
Fold in the raspberry ruffles and raspberry yogurt.

Pour over the biscuit base and chill.
Decorate the top with fresh raspberries and crushed raspberry ruffle bar.

It would have to be White Christmas every single time.  I enjoy everything related to Christmas but the ending of White Christmas makes me cry every single time I watch it.

Yes, last year I built one with my best friend Stacey while listening to the "Home Alone" soundtrack acting like children.  It was fabulous and must be repeated.

Retro..

So, recently I have been wanting more 'retro' or 'vintage' style accessories for my iPhone and possibly my iPod, unlikely for my laptop though as it is rarely in a case!

My target line looks oh so far away but it is only 4 stone 11 lb, which I could easily manage to have off by this time next year if i stop dilly-dallying :)

Slimming World Week 28

Well now m'dear, I got last week's 3lb off, am well chuffed! Even text Lisa when I got out with my news! 1lb more and I'll be back on track again!

I cannot remember the last time my scales said 14 stone when I was standing on them..
The ups and downs may happen, as long as it keeps going down!


I have 2 stone 4.5lb off now, and it has changed my life.

I had gorgeous boots on tonight with a stiletto heel and usually this would cause me to walk "funny" and have really sore feet, but i am now able to stand in them all night AND walk "normally" :)

Struggling...

Ugh! Slimming World was going so well for me but for the last month or so I havent been doing it properly and I'm getting myself so down about it that I'm eating junk as a pick me up :(
Last Tuesday I weighed in at 14 stone 11 lb, which was a gain of 1 lb. I have just weighed myself quickly upstairs and I weighed in at 15 stone 4 lb. a gain of 7 lb. disgusted at myself! Christmas was just a small goal of getting my 2.5 stone award and I keep getting further away instead of closer. Grr.

Taking a food diary tonight from Lisa to see if that keeps me on track any better. Hopefully it does!!

First Fire of the Year...

Had a chimney sweep out to the house today, got the fire all ready for winter time and mummy said we should light it... So I did :). The house is oh so toasty now! I love winter time.

Slimming world tonight, hopefully I have my 2.5lbs off to get my 2 stone award but I don't know, only have 1.5lb off according to my scales upstairs- was so good all week when they didn't work! Fingers crossed eh :)

Syn Free Platter with Superfree Salsa

Herby Chicken Drumsticks

Smokey Fried Rice

Syn Free Chips

Superfree Salsa



Herby Chicken Drumsticks

Chicken Drumsticks

Chicken Bovril Paste

1 Chicken Stock Cube

1 teaspoon Black Pepper

and these little beauties:

Charbroiled chicken spice
Spicy hot spice

SYN FREE!

Basically all you need to do:

In a container or bowl sprinkle your herb mix and crumble the stock cube into the mix then add the pepper and give it a shake to mix

Remove all of the skin from your chicken drumsticks

Cover drumsticks individually in Bovril

Roll drumsticks in herb mixture

Stick in the oven for 45 minutes

For the Rice dish:

Cooked Rice

Red Pepper, Yellow Pepper

Red Onion

2 cloves Garlic

1/2 Chilli

1/2 tablespoon chilli powder

1/4 tablespoon paprika

Salt to season

Boil some rice at any time of the day, works much better if you’re using leftover rice or rice that has been cooked the day before so great for a leftover recipe!

In a pan, fry some chopped red onion, red pepper, yellow pepper, mushrooms and garlic for about 4 minutes then add your spices

After this throw in your cooked rice and stirfry until heated through

The Superfree Salsa

Tomatoes / chopped tomatoes / passata

1/2 red onion

1/2 red pepper

1/2 yellow pepper

3 slices cucumber

1 clove garlic

1/2 chilli

1/2 teaspoon basil

1 teaspoon chilli powder

Salt to season

Saturday Jobs

Oh my days...

I hate working in Sainsburys on a Saturday :( it was so busy today it felt like Christmas Eve all over again! Totally not happy!  Was in Kiosk for 7 hours and didn't get my second break cause it was so busy and I had too much to do!

Glad to be home.  Had vegetable soup for tea and some bread- was so tasty.  Watching Law and Order now the. Going to have an awesome bubble bath before bed- remove the stress from my neck muscles!!

17 Days and Counting...

hi!
I start uni in 17 more days and i CANNOT wait!!! it's going to be a fabulous year, i just know it already! Going to work my butt off and get an awesome degree :)  Just need a fab bag and more "school things" :)

Got paid today too, lil £500 pay cheque.. gonna do me rightly, two more pay cheques and i'll be allowed my debit and credit cards back and might actually be allowed to go shopping for new clothes!!

oh have i mentioned, i'm down one dress size :) SO excited and oh so happy.. such a boost!  Seen a lovely top in Sainsburys tonight at work, so going to buy tomorrow with my allowance while i still have 15% off :)

SW this week.. want to reach my 2 stone target, need 2.5lbs off so really being hopeful and going to be oh so good, proper protions and lots of superfree food all week long.

Weight loss 30/08/2011

Well now, 1.5 lb off tonight, making my total loss 1 stone 11.5 lbs :D

I feel so friggin' fantastic for it too! 4 stone 2.5 lbs to go and I'll be at my target weight- actually cannot wait to be a size 10 :D

Home to a tub of Ben and Jerry with Stacey and some sweeties also. Back to butts tomorrow and I'll be flying along to the same loss next week :)

I can't believe it's been 5 days already! Only 5 weeks 2 days left and I'll be a happy bunny! Already looking at new jewellery for when it's all done!

Had a quiet day today, hot water bottles, mugs of tea, some James Bond.. An interesting way to spend a Bank Holiday in August.

Watched Hall Pass tonight- what an awesome film! Laughed so many times! Left me feeling rather upbeat too... Dear only knows why/how!

Heading for some munchies now, 1am and I'm hungry!! Grrr :(

Thursday Evening

Oh my, what a day!  The heaviest rain I have seen all summer- please go away again until about November time :)

Watching tv with mum and Rachel.  The show is on the royal family.  I've decided no one loves the monarchy, they love the drama that is associated with it. 

I was at the gym today with Diana- two weeks off exercising really does ruin your energy levels, we were fit for nothing after 20 easy minutes on the treadmill.  Totally got drenched walking back to the car but a warm shower was waiting for us both so we survived it.

Made an awesome spaghetti bolognese for dinner tonight- so many fruit and veg, this diet is a breeze!! Just need a "syn-free" bar of chocolate to munch my way through now...

Coleraine tomorrow with Stacey- can't wait, gonna be a fun days shopping then home to work at 7pm.  That's obviously not an exciting part of my day...

Must go- Law and Order awaits me!

Hi :)

I've never had a blog before so this could be interesting or a complete waste of Internet space!

Lay on my bed watching Sex and the City talking about the Ward Park Eminem concert that I failed to go to... Apparently it was an amazing night too-excluding the thunder and lightening.

I was in work tonight 5pm-10pm. Such an easy night, all the rain in Ballymena kept a lot of people indoors- plenty of time for me to muck about :)

Gym tomorrow- burn off the naughty Snickers I had earlier on and the toast I ate as supper. 11 stone here I come!!

Oh potential blog posts each Tuesday night about Slimming World and my weightloss and possibly about my Image Therapy sessions!
